2 ways to make creamy, smooth, and fragrant yellow corn milk that doesn’t separate
Winter is the time when baby corn is sold a lot outside the market. And this is the best time to make delicious baby corn milk. A cup of hot and smooth baby corn milk will be great. Here are 2 ways to make smooth and fragrant baby corn milk:

Making baby corn milk by steaming the corn first
Prepare ingredients
You prepare 2 sweet corns, 1 pack of unsweetened fresh milk 220ml
125ml condensed milk with sugar
1l water
1/2 teaspoon salt
Step 1: Cook the corn
You peel off the old layer of corn and wash the corn and the inner layer and then cook. Do not peel off the inner husk to keep the aroma and sweetness of the corn. Cook the corn in about 10 minutes with 1 liter of water. Bring the water to a boil, then reduce the heat to simmer to ensure that the corn is cooked just right without being overcooked.
Take out the cooked corn and let it cool down, then use a knife to remove the kernels.

Step 2: Blend the baby corn
Blend the cooked corn to make it smooth, add the cooking water to make the milk sweeter, add fresh milk and condensed milk and blend together. Pass the mixture through a strainer to remove solids.
Now you have smooth and golden baby corn milk. However, note that if you want to drink it immediately, you must ensure that the blender is clean to avoid bacterial contamination. If not, you can pour the mixture into a pot and cook it again with low heat. Stir well to avoid burning at the bottom and stir in one direction to prevent the corn milk from separating.
Making baby corn milk from raw corn
Ingredients:
2 raw baby corns
1L filtered water
1 pack of unsweetened milk
125ml condensed milk
1/2 teaspoon salt

Step 1: Prepare the corn
Peel off the outer layer and remove the beard. Then wash it thoroughly.
Use a knife to slice the corn kernels. Put the corn in a blender with filtered water to make it smooth.
Pass the mixture through a strainer for a smoother texture.
Step 2: Cook the milk
Pour the corn mixture and milk into a pan and cook over medium heat until the milk boils. Boil the mixture at medium temperature, stirring constantly for about 5-7 minutes, maintaining the moderate temperature and stirring to prevent separation. You can use a microwave or electric stove to boil the mixture. Turn off the heat and let the corn milk mixture cool.
The core, husk, and beard of the corn can be used to make tea or as a substitute for filtered water when blending the corn, which will make the baby corn milk more fragrant and sweet.
Note when making baby corn milk
If you prefer pure vegetarian baby corn milk without using cow’s milk or condensed milk, you can remove the milk and add coconut flesh for blending. Or you can make pure fresh baby corn milk with a little sugar or without adding anything.
You should add a pinch of salt to make the milk more flavorful and prevent separation.
